I have only made gingerbread cookies once before many years ago but remember it being a success so I did it again! If you love gingerbread but have never make it, it's actually easy. The only ingredient I needed to make a trip for was the molasses.
2 cups all purpose flour
2 cups whole wheat flour
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup firmly packed light or dark brown sugar
1/2 cup molasses
1/2 cup water
1. In a medium bowl stir together both flours, ginger, cinnamon, baking soda, cloves and salt.
2. In a large bowl, cream the butter with the sugar until combined. Beat in the molasses and water. Then beat in the flour. As it starts to come together I find it easier to use your hands to combine well. Then form into a ball and wrap in wax paper. Chill for at least 1 hour.
3. Preheat oven to 350F.
4. Using a floured rolling pin on a floured surface, roll out the dough (1/2 at a time) until 1/4 inch thick. Cut into cookies using cutters or other desired tool. Don't worry about texture. They are homemade!
