Vegetable Chili

Purple Eyeglass Chain
I rarely work with purple! I have no idea why. So here is a little purple!

Vegetable Chili
This is a delicious winter dish!
It is fairly easy with only celery, bell pepper and zuchini to chop up. I use a small bunch of celery, 1 bell pepper (could be any color), 2 zuchini, and an 8 ounce package of mushrooms.
Everything gets added to a big pot. I toss them in some vegetable oil to start.
Then I add a 14 ounce can of tomatoes (use a 28 ounce can for more tomato flavor...I have to use less with my stomach acid problems) and a 14 ounce can of red kidney beans (rinsed). 

After all the veggies are in there, 1 teaspoon of each of the following is added: chili powder, ground cumin and ground coriander. These quantities should be increased if more tomato or veggies are added. On a super cold day, toss in some cayenne pepper for added warmth!
I would also suggest onions and fresh garlic. Since my tummy does not appreciate those ingredients, I leave them out.
This is brought to a boil then simmered for 20-30 minutes until desired texture.

Serve with rice, quinoa or yogurt. It makes for a great lunch to bring to work!

Bead Drive
I just wanted to mention a bead drive for those of you how make jewelry. Under His Wings is an organization for girls 13-18 years of age who are in a crisis situation. They learn how to make jewelry and sell their creations to help fund the charity. They are also learning business skills in this program. It is a perfect way for the girls to develop self worth and useful skills for their future.

So they are accepting beads, old tools, findings, etc. Every little bit helps to boost their creativity! Here is the link at the Jewelry Making Journal for additional information. They are looking to receive everything by January 23. This drive really pushed me to do some much needed detash!

  11. I love purple, and that purple chain is so beautiful! The chili looks delicious too. Almost like the vegetable gumbo I made last night. Yum Yum. That also sounds like a great organization. I need to find one for yarn lovers. I gave away a humongous bag of yarn at the end of the year and I probably could stand a little more destashing. Especially for a good cause. :-)
