Gingerbread Cookies

It's that time of year and I was having a craving! 
I have only made gingerbread cookies once before many years ago but remember it being a success so I did it again! If you love gingerbread but have never make it, it's actually easy. The only ingredient I needed to make a trip for was the molasses.

2 cups all purpose flour
2 cups whole wheat flour
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon 
1 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup firmly packed light or dark brown sugar
1/2 cup molasses
1/2 cup water

1. In a medium bowl stir together both flours, ginger, cinnamon, baking soda, cloves and salt.

2. In a large bowl, cream the butter with the sugar until combined. Beat in the molasses and water. Then beat in the flour. As it starts to come together I find it easier to use your hands to combine well. Then form into a ball and wrap in wax paper. Chill for at least 1 hour.

3. Preheat oven to 350F.

4. Using a floured rolling pin on a floured surface, roll out the dough (1/2 at a time) until 1/4 inch thick. Cut into cookies using cutters or other desired tool. Don't worry about texture. They are homemade!
Before Baking
5. Place on an ungreased baking sheet. Bake 10 to 12 minutes or until cookies do not leave an indentation when touched. Let cool on rack.
After Baking
I love their bready looking texture! Plate them up and sprinkle with powdered sugar. Maybe frost them!

  16. I've never made gingerbread, actually I've never thought about it. But this looks good! I finally bought some cookie cutters for the day that I actually make cookies that need cutting. Until then....
