Stuffed Sweet Potatoes

New Dangle Style
I had these sweet sterling silver drop settings sitting in a drawer for a very long time with the intent of making these simple, pretty earrings! 
I finally got to do so! They come in different sizes and stones. Very fun, but not easy to photograph! Available at Etsy.

Stuffed Sweet Potatoes
These were delicious! We started out baking halved sweet potatoes until tender.
We mixed black beads, corn and diced jalepeno peppers. We added chili powder and shredded cheddar jack cheese.

The sweet potatoes got half hollowed out and that filling was added to the mix. Then stuffed into the potato halves.
Since we are gluttons for cheese, plenty more was added on top before baking again until the cheese was browned! 
The results were mouth watering, healthy, vegetarian and gluten free!

  26. Those earrings are super cute and dangley! And, I have got to try this recipe. I purchased two sweet potatoes the other day and I saw a recipe for stuffed sweet potatoes, but I think yours is the one I like best. Gotta seriously try this. :-)
